I've got the opportunity to ditch the hard top project in the garage and switch over to a t-top. The ultimate goal of this project is a daily driver that can turn 10's in race trim. Can a t-tops car turn 10's without breaking things? What additional braces are needed? Would a roll cage do the trick?

Yep, they can ... in fact, didn't Pete Barton go 8s in his? Something outrageous like that.

The front frame braces and rear seat braces will help stiffen the car up. Never hurts to add the missing bushings.

I found the roll cage really made the car launch MUCH more consistently.

I don't know about Pete Barton, but Pete Bernard did. I think he is changing it to a hard top for weight savings.
