Pushing the plunger in overrides the proportioning valve so you get full fluid flow.

I wouldn't try changing fluid in the Master to avoid air in the master (that's a separate bleeding procedure and usually done on the work bench). I'd just pump enough through to swap out all the fluid.

If you use a vacuum bleeder rig, that can simplify the process too (and you don't necessarily need to have a helper to push the brake pedal). The published procedure is letting the brake pump do the work with a helper.
