Engine dies, why?

I have an '84 buick t-type. A 355 was installed in place of the v-6. When I am driving the car or soemtimes just when it idles, it dies. The carb is adjusted nicely and my fuel pressure gauge holds well so my question is what could cause this? If I keep turning the key on and off it will start again but not before my engine floods. I believe it is the ignition switch and not sure what else it could be but from what I read about on them it wouldn't run period if it was bad. Everything is pretty much disconnected since it is a carb car now. Any advice? Thanks

By 355 I assume you mean a Chevy motor. If so, we really don't speak Chevy here.

Still using the in-tank EFI fuel pump? That'd make a carb flood really quickly.
